123 Organic Reposado
(Dos) 100% Agave Tequila

By Robert Plotkin

Not all blue agaves are created equal. Those used to make 123 Organic Reposado (Dos) 100% Agave Tequila are nurtured in the mineral rich soil of the Lowlands of Jalisco. In addition, the agaves are USDA and EU certified organic, meaning they were cultivated without the use of pesticides or synthetic fertilizers. Guaranteed it was worth the effort and expense.

The artisanal range of tequilas (pronounced "Uno Dos Tres") is made in Amatitán, Jalisco at Tequila Las Americas [NOM 1480]. After the agaves are harvested and shredded, they are baked in traditional stone ovens over several days and slowly fermented before being double-distilled in stainless steel pot stills. The reposado is then aged for a minimum of 6 months in American white oak barrels and bottled at 40% alcohol by volume (80 proof).

One of the bonafide celebrities of the range, the reposado has a amber/golden hue, a lushly textured body and a bouquet saturated with the bakery-like aromas of caramel, spice, toffee and vanilla. The palate is a lavish affair of cocoa, vanilla, cinnamon and crème brûlée. The flavors persist long into the extended finish.

Equally engaging is the 123 Organic Añejo (Tres) 100% Agave Tequila. Barrel-aged for up to 18 months, this noble tequila has a rich golden hue and a caramel, vanilla and dark chocolate nose. It bathes the palate with the lingering flavors of cocoa, mint, cinnamon and toffee. The longer the tequila breathes, the more flavors it seems to exhibit.

Bottled fresh from the still, crystal clear 123 Organic Blanco (Uno) 100% Agave Tequila has a floral nose with spicy, peppery notes and a broad palate of anise, caramel, vanilla and citrus flavors. It's makes a marvelous entrée to the joys of sipping unaged tequilas.

The man behind the brand is tequila expert David Ravandi. He created the 123 Organic Tequila (Uno Dos Tres) line specifically with wine enthusiasts in mind. Their impeccable bouquets and brilliant agave-induced flavors are the product of artisanal, small batch distillation and estate hand bottling. The organic nature of these spirits, their cultural heritage and the sustainability of their packaging are among their many cachets of quality and a glimpse into one man's vision.
