Here's an artisanal brand that respects Mother Earth. The blue agaves used to make the altogether marvelous 123 Organic Blanco (Uno) 100% Agave Tequila are USDA and EU certified organic, meaning they were cultivated without the use of pesticides or synthetic fertilizers. Not only that, the packaging is made from ecologically sustainable materials. This is a great blanco on many different levels, not the least of which is that it's gloriously delicious, a marvelous entrée to the joys of sipping unaged tequilas. Drinking responsibly never tasted so good.

This Lowland gem is made at Tequila Las Americas [NOM 1480] in Amatitán, Jalisco. After the agaves are harvested and shredded, they are baked in traditional stone ovens over several days and slowly fermented before being double-distilled in stainless steel pot stills. The blanco is bottled fresh from the still at 40% alcohol by volume (80 proof).

Be fully prepared to be impressed. The blanco is crystal clear with a silky, lightweight body and a generous floral nose with spicy, peppery notes. Its aromatics alone are worth the price of admission. The broad palate is brimming with anise, caramel, vanilla and citrus flavors that linger well into the delectable, velvety smooth finish. It's a brilliant spirit in all respects.

The range also includes 123 Organic Reposado (Dos) 100% Agave Tequila, which is aged for 6 months in American white oak barrels. The amber/gold tequila has a bouquet saturated with the aromas of caramel, spice, toffee and vanilla, and a layered palate of cocoa, vanilla, cinnamon and crème brûlée.

The portfolio's elder statesman is the 123 Organic Añejo (Tres) 100% Agave Tequila. Barrel-aged for up to 18 months, the añejo has a rich golden hue and a caramel, vanilla and dark chocolate nose. The tequila bathes the palate with the lingering flavors of cocoa, mint, cinnamon and toffee. It's a world-class treat.

The man behind the brand is tequila expert David Ravandi. He created the 123 Organic Tequila (Uno Dos Tres) line specifically with wine enthusiasts in mind. Their impeccable bouquets and brilliant agave-induced flavors are the product of artisanal, small batch distillation and estate hand bottling.
