While technology has made our lives better in countless ways, it has done nothing to improve the process of making tequila. With few exceptions, those who employ the traditional methods continue to produce the most flavorful and highest quality tequila. Such is the working philosophy behind ultra-savory 4 Copas Tequila 100% de Agave.

These award-winning tequilas are double-distilled in small batches at Compañía Tequilera La Quemada in El Arenal in the lowlands of Jalisco. The entire range is made exclusively from mature, USDA certified organic agaves grown on the distillery's estate. The harvested plants are baked in a traditional oven called an hornos. This slow process ensures that the agaves are properly cooked and that the sugars don't caramelize. Even the yeast used to initiate fermentation is cultivated from the agave plant, a process that takes approximately 72-96 hours.

There's something compelling about drinking a handmade tequila created with exacting precision by people passionate about their work. An excellent example being 4 Copas Reposado, an elegant spirit matured 9 months in American white oak barrels previously used to age bourbon. The pale gold tequila has a lightweight, oily textured body and a floral, honey and spice bouquet. Its soft, gentle entry expands quickly filling the mouth with the enticing flavors of caramel, cinnamon, citrus and toasted oak. The finish is moderately long and laced with fruity, slightly smoky notes. This reposado is a bona fide treat from start to savory finish.

The 4 Copas Añejo is equally engaging. It's matured for a year in charred American white oak barrels, during which it develops a deep amber hue, an oily body and vanilla, caramel and brown sugar aromas. It's an aromatic mélange reminiscent of a neighborhood bakery. The añejo has a semisweet palate balanced with spicy and citrusy notes and a satisfying finish.

Bottled immediately after distillation, the 4 Copas Blanco is an exuberant tequila with impeccable clarity and a bouquet of lemon zest and white pepper. The blanco has a silky lightweight body and a lingering citrus and herbaceous palate. It makes a great entree to the category.

Few things connote purity more than the word organic does. These days most people have an appreciation for heightened quality of an organic spirit, which only adds to the commercial appeal of 4 Copas Tequila. It's like an island of sanity in a topsy-turvy world. Salud!

4 Copas Mojito
Bucket glass, chilled
Build in glass
6-9 fresh, organic mint leaves
3/4 oz. Organic 4 Copas Agave Nectar
1 oz. fresh organic lime juice
Muddle contents and add ice
2 oz. 4 Copas Blanco 100% Agave Tequila
2-3 splashes natural sparkling water
Stir gently
Lime wedge and mint sprig garnish
4 Copas Pomegranate Margarita
Margarita glass, chilled
Pour into an iced mixing glass
2 oz. 4 Copas Reposado 100% Agave Tequila
1/2 oz. fresh organic lime juice
1/2 oz. 4 Copas Organic Blue Agave Nectar
2 oz. fresh pomegranate juice
Shake and strain
Lime wedge garnish
Jalisco Flower
Salt rimmed cocktail glass, chilled
Pour into an iced mixing glass
1 1/2 oz. 4 Copas Reposado Tequila
3/4 oz. St Germain Elderflower Liqueur
1 oz. fresh grapefruit juice
Shake and strain
Fill with chilled Prosecco
