Few things better complement the flavor of premium tequila than the savory, palate warming taste of fresh peppers. It’s a sensory combination that’s found a permanent home behind American bars. While experimenting with infusion jars may bring joy to some, a more viable option for the rest of us is simply reaching for a bottle of Agave Loco Pepper Cured Tequila.

This innovative spirit is produced by La Cofradia, NOM 1137, one of the venerable distillers in Jalisco. Its chassis is 100% agave reposado tequila matured approximately 8 months in charred, American oak bourbon barrels. After it comes off the wood, the tequila is infused with the essential oils of six varieties of peppers native to the area, a proprietary mix that includes jalapeños and habaneros. The peppers featured in the recipe were selected for their individual characteristics— sweetness, relative heat and flavor profile. The all-natural infusion is bottled at 35.5% alcohol by volume (71 proof).

Agave Loco is a sizzling break from the staid and conventional. The tequila has a tantalizing appearance with naturally obtained opacity from the peppers, which is the first indicator of the nearly combustible heat to follow. The savory aroma of the peppers is fresh and herbaceous with nary a trace of spicy heat. That aspect of the experience is reserved for shortly after its initial approach. The peppery blast quickly rises to a crescendo just short of producing tears. The extended finish is savory, breathtaking and impeccably balanced so as not to scorch the larynx. Agave Maria
Bucket glass, ice
Pour into an iced mixing glass
1 1/2 oz. Agave Loco Pepper Cured Tequila
1–2 dashes Worcestershire Sauce
1–2 dashes A–1 Sauce
1/4 tsp. celery salt
4 1/2 oz. Bloody Mary Mix
Shake and strain
Sliced Jalapeno and celery stalk garnish
Chile Lime Margarita
Cocktail glass, chilled
Pour into an iced mixing glass
1 1/2 oz. Agave Loco Pepper Cured Tequila
1/2 oz. Triple Sec
3/4 oz. fresh lime juice
Shake and strain
Lime wedge garnish
Chile Mango Margarita
House specialty glass, chilled
Pour into an iced blender canister
1 1/2 oz. Agave Loco Pepper Cured Tequila
4 oz. Mango puree or mix
Blend thoroughly
Mango slice garnish
