The tequila is produced at the Destiladora del Valle de Tequila [NOM 1438] in the lowlands of Jalisco. After harvesting, the mature agaves are slowly steam roasted in a traditional stone oven and crushed using old fashioned molinos. The extracted juice is then transferred to large open tanks where it is allowed to ferment for up to 60 hours, a process which is many times longer than most. The tequila is double-distilled in the distillery's two pot stills.
Apocalypto is a handcrafted gem matured for a minimum of 6 months in American white oak barrels before being bottled at 40% alcohol by volume (80 proof). The tequila has a pale amber/golden hue, a lightweight, velvety textured body and a wafting floral and herbal nose with notes of vanilla, malt, cinnamon and dark chocolate. Its brilliant aromatics are thoroughly captivating and capably set the stage for what's to come. The soft, gentle entry quickly fills the mouth with the tantalizing and skillfully balanced flavors of coffee, caramel, dried fruit, cinnamon, vanilla and powdered cacao.
