One of the cornerstones of success for bars and restaurants is to attract as many women through the front door as feasibly possible. Not surprisingly, places where women like to frequent are typically quite popular with men. That fundamental fact is why "Ladies Nights" are so successful. Diva Tequila is crafted at Tequila Quiote [NOM 1433] in Atotonilco El Alto in the heart of Jalisco. After harvesting, the mature agaves are brought to the distillery where they are baked in autoclaves to convert the plant's starch into fermentable sugar. The baked agaves are shredded to extract the sugar-rich juice, which is transferred to vats where it is allowed to slowly ferment. The fermented juice—which is referred to as mosto— is then double-distilled in copper pot stills and eventually bottled at 40% alcohol (80 proof).

There are two unusual aspects to how this tequila is made. The first is the addition of all-natural orange flavoring; the other is the added touch of certified pink coloring. Both are singular to the brand and make the tequila more attractive to women.

The fact is Diva is a terrific tequila regardless of your gender. It has a faint pinkish hue, a satiny textured, medium-weight body and a prominent citrus and floral bouquet. The focused aromatics contribute greatly to the overall experience. The tequila has a soft and smooth entry that quickly fills the mouth with a skillfully balanced palate, a tantalizing array of oranges, grapefruit, pepper, cinnamon and nutmeg. The dry, citrus flavors persist throughout the spicy warm finish.

Diva's depth of character makes it a highly versatile product behind the bar. It performs beautifully in a specialty Margarita and Paloma, as well as a tequila-based craft cocktail. That said, the tequila is an ideal choice to serve chilled or over ice.
