Founded in 1877 by two Englishmen—Alexander Williams and Arthur Humbert—the firm of Williams and Humbert maintains over 300 hectares of the finest vineyards in the sherry-producing region of Jerez, Spain. Their core brands include Dry Sack Sherry, Gran Duque de Alba Brandy, and the inimitable Dos Maderas 5 + 5 P.X. Rum, one of only a handful of triple cask aged rums. For those in search of a singular taste sensation, this sherry-laced gem is just the ticket.

Ultra-premium Dos Maderas Rum is distilled in both Guyana and Barbados. Once the rums exit the still, they are transferred to charred in American white oak barrels for aging. After a minimum of 5 years in wood, the rum is then shipped to Jerez de la Frontera in the heart of Jerez-Xerez region for blending and further aging.

The rums then enter the bodaga's a unique aging system of Soleras and criaderas. The oak barrels used for maturation were previously to age acclaimed "Dos Cortados" 20-years old Palo Cortado Solera Sherry. There it will stay for 3 years until it is deemed to have reached maturity. The final step in this extraordinary spirit's journey is its further maturation in casks that once held "Don Guido," a 20-years old, Pedro Ximenez sherry. The finished rum is bottled at 40% alcohol (80 proof).

Be prepared to be seriously impressed with this elegant, 10-years old rum. Dos Maderas 5 + 5 P.X. Rum has a dark amber hue, a lushly textured, full body and the tantalizing aromas of tropical fruit, raisins, toasted oak, vanilla, fig and sherry. Its brilliant aromatics do a marvelous job preparing the palate for the joys to follow. The entry is spicy warm, but nowhere close to hot, while the rum's lingering finish is slightly smoky and decidedly influenced by the sherry wood.

According to Rafael Rodriguez, director of sales for the Americas and Canada, Dos Maderas 5 + 5 P.X. Rum combines the flavor of Caribbean rum with dry and sweet sherry casks. "The challenge posed by using sherry wood in the aging process is to not overpower the rum's flavor profile or diminish its uniqueness. This wood program imbues the rum with the character of Palo Cortado and Pedro Ximenez barrels, some which are be up to 50-years old. The combined sweetness of the sugarcane and the flavor of fruits and nuts that have become so recognizable with Sherry de Jerez is something magical."

Although it spends 2 years less in the barrel, Dos Maderas 5 + 3 Rum is so skillfully balanced the character of the rum and influence of the sherry can be perceived simultaneously. The effect is quite mesmerizing.

The Dos Maderas 5 + 3 Rum has a dark, reddish/copper appearance, a full, curvaceous body and a generous bouquet brimming with the aromas of roasted nuts, tropical fruit, vanilla, baking spices and gentle whiffs of sherry wood. Make sure you spend a few more minutes allowing the rum to breath and fully open up. Your patience will be well rewarded. On the palate, Dos Maderas 5 + 3 Rum is fruity, spicy and semisweet. The long finish is saturated with the aromas and flavors of the sherry.

Although the rum is an excellent choice for featuring in craft cocktails and mixed drinks, both versions of Dos Maderas deserve to be sipped neat at least once.
