David Ravandi is a tequila visionary. He perceives trends well before the rest of us, and more importantly, acts upon his convictions. For example, Ravandi was an early pioneer in developing organic tequila, first with Casa Noble 100% Agave Tequilas, and more recently, with the launch of his innovative and highly successful range, 123 Organic Tequilas (reviewed herein). The trailblazing Ravandi has changed how we all see tequila and assess the quality of the agaves used to make it.

Well, the enterprising Ravandi has done it again, this time with the release of artisanal El Luchador Organic Blanco 100% de Agave Tequila, the first in a series of amazingly flavorful spirits. The tequila is handcrafted in the mountains of Amatitan at an altitude of 4,200 feet. Not surprisingly the single estate agaves used to make the tequila are USDA and EU certified organic, meaning they were cultivated without the use of pesticides or synthetic fertilizers. The end result is a cleaner finished spirit.

Once harvested, the agaves are taken to the distillery where they are shredded and baked in traditional stone ovens over several days. Afterwards the extracted juice is transferred to large vats where it is slowly fermented before being double-distilled in stainless steel pot stills.

Here's the twist. While nearly all tequilas are marketed at the conventional strength of 40% alcohol (80 proof), El Luchador Tequila is bottled at a lip-tingling 55% alcohol (110 proof). Since water is used to render the tequila to its finished strength, the less water that's used, the more flavorful the finished spirit. As a result, the flavors in El Luchador are vibrant, complex and thoroughly delicious, a marvelous glimpse into what tequila ought to taste like.

Be prepared to be thoroughly impressed. El Luchador Tequila has pristine clarity, a lightweight, satiny textured body and a brilliant set of aromas including black pepper, caramel, citrus and a light floral component. Its aromatic signature does an excellent job preparing the palate for the pleasures to come. The entry is only slightly warm, which considering its elevated alcohol content, is an indication of skilled distillation. The palate is simply amazing, a lavish offering of cinnamon, baked agave, lemongrass, toffee and even more citrus. The finish is spicy warm and remarkably smooth.

Ravandi chose to align the brand with Lucha Libre, a form of free-style wrestling in which participants wear masks and typically perform aerial maneuvers. It's a strong move as Lucha Libre is one of the fastest growing sports in the world.
