The Huizache shrub is indigenous to the semiarid climate of Jalisco, Mexico. It can be found growing in close proximity to the expansive fields of Weber blue agaves. The Huizache bears delicate, aromatic yellow flowers, which provide stark contrast to the majestic agaves. It is said true tequila is born crowned by Huizaches. The natural connection between the two native plants is celebrated with the introduction of the altogether charming Tequila Huizache 100% de Agave.

This critically acclaimed spirit is crafted in Amatitán by Excelencia Tequilera de Jalisco [NOM 1437]. Founded in 1870, the distillery is now owned and operated by sisters Luz Gabriela and Esther Maria Elisa Romo de la Peña. Descendants of the original founders, the sisters have outfitted Excelencia Tequilera with state of the art equipment designed to deliver high quality 100% agave tequila.

After harvesting, mature agaves are brought to the distillery where they are steam baked in stainless steel autoclaves, shredded and slowly fermented in large vats. The distillery uses naturally occurring strains of yeast to precipitate fermentation. The fermented wash—called mosto—is then continuously distilled in cutting-edge, stainless steel columns. The tequila is bottled at 40% alcohol (80 proof).

Unadulterated by the affects of barrel aging, Tequila Huizache Blanco 100% de Agave is brimming with fresh, exuberant character. The crystal clear spirit has a featherweight, satiny textured body and a wafting bouquet laced with herbaceous, floral and tropical fruit aromas. The longer the tequila is allowed to breathe, the more prominent are its aromatics. It has a soft, smooth entry that quickly expands, filling the mouth with the enticing flavors of honey, baking spice, herbs and white pepper. The lingering finish is spicy warm and wholly satisfying. Top notch.

The elder statesman of the range is Tequila Huizache Reposado 100% de Agave. It is matured a minimum of two months in charred, American white oak barrels. During its stay in wood, the tequila obtains a golden hue, a curvaceous, medium-weight body and a generous bouquet of vanilla, butterscotch, caramel and baked agave aromas. It has a layered palate of tropical fruit, toasted oak, fresh herbs and a hint of pepper. The long finish features the added flavors of toffee, cacao and vanilla.

Those who contend that traditional techniques are the only way to make a great spirit need to try Huizache Tequila. Well conceived and skillfully produced, both the Huizache Blanco and Reposado are deserving of the medals they've earned in international competitions.
